Stevia is best for recipes that require crisp cookie finishes, such as shortbread. You can still use it for chewy cookie recipes, but we recommend adding ingredients that can add moisture, such as pumpkin, uncooked oatmeal, applesauce, and seed or nut butter. This is to avoid having cookies that are too dry or crumbly.
